The term I most object to is "politically correct." It's a way of making fun of language that attempts to be respectful, inclusive, and/or sensitive to the dignity of others. Sad that we should live in a time when many folks would rather be rude or even deliberately cruel.

That said, there is humor in anything when it's taken too far, and I must admit some of the euphemisms you cite sound pretty silly to my ears as well.

"Food insecure" is not among them, though. It's altogether too accurate a description of the daily life of altogether too many people, many of them children.
